Bakery Display Case Buying Guide

Freestanding floor cases

Full-height cases that bring their own base, from 36" to 72" wide and 295 L to 810 L — the centrepiece of a bakery or café counter. Our own Polarman range comes in two heights per width and in curved or square glass, with LED lighting and a bottom-mount compressor. Shop freestanding bakery cases →

Countertop cases

28" to 60" wide, 27" tall and 115 L to 252 L, sitting on an existing service counter so the glass lands at eye level without costing floor space. Polarman PLM-Q and PLM-W series, all on a standard 110–120V outlet. Shop countertop bakery cases →

Deli and hot display

If the case is holding sandwiches, salads or prepared food rather than pastry, a deli case runs colder and is built for the job; for anything served hot, see hot food display.

How to choose a bakery display case

  • Refrigerated or dry. Cookies, breads and bagels are fine in an unrefrigerated case. Cheesecake, cream, custard and fresh fruit need refrigeration — everything on this page is refrigerated.
  • Countertop or floor. Countertop costs you counter (and up to 310 lb on it); floor cases hold two to three times as much and can be placed to shape the queue.
  • Curved or square glass. Curved is the classic patisserie look; square gives more capacity per inch and is easier to clean. At 48" wide that is 420 L curved against 530 L square.
  • Lower or taller. Each width comes in two heights — roughly 48" for sightlines over the case, or 55 1/2"+ for noticeably more capacity in the same floor space.
  • Temperature. These cases hold 32–53.6°F, deliberately warmer than a reach-in so cake does not dry out. Full bakery case buying guide →

Bakery display case FAQ

What temperature should a bakery display case be?

These cases hold 32°F to 53.6°F. Bakery cases run warmer and more humid than a reach-in on purpose, because cold dry air stales cake and dulls chocolate. If you hold cream-filled or custard product, set the case to the bottom of its range so product stays at or below 41°F, and check with a probe thermometer rather than the dial.

What is the difference between a dry and a refrigerated bakery case?

A dry case is an unrefrigerated glass cabinet for cookies, muffins, breads and bagels. A refrigerated case has a compressor and holds cheesecake, cream-filled pastry, mousse and anything with dairy or fresh fruit. The cases on this page are refrigerated.

Curved glass or square glass?

Mostly a look — curved is the traditional patisserie front, square is modern and easier to clean. Square also gives more usable volume at the same width: 530 L against 420 L on a 48" case.

What size bakery display case do I need?

Countertop cases hold 115–252 L and suit a café counter or a small bakery. Floor cases hold 295–810 L. Choose width by the counter run you have, then pick the taller version of that width if you need more capacity without more floor.

Do bakery display cases need a drain?

These Polarman models are self-contained with bottom-mount condensers and do not need a plumbed drain — only a dedicated 110–120V outlet. Keep the condenser grille clear and the case out of direct sun.

How do you load a bakery case so it sells?

Fill the top shelf first — it is at eye level from the queue. Leave air around each item so the case reads as a bakery rather than storage, and so refrigeration can circulate. Face the case toward foot traffic, not toward the register.
