Hot Food Display Buying Guide
A hot food display does two jobs at once: it holds cooked food above the temperature an inspector will check, and it puts that food where a customer can see it. Choose the format by who reaches in — staff or customer — then the width, then check the circuit. That last step is where most of these purchases go wrong.
Four formats
- Heated display case — three flat shelves behind glass with sliding doors at the back so staff restock without reaching over the product. Delis, bakeries, prepared-food counters. 27"–48".
- Slanted heated merchandiser — two shelves angled toward the customer behind three-sided glass, open front, no door. The convenience store and gas station format for hot dogs, burritos and wrapped breakfast sandwiches. 24"–50".
- Pizza warmer — four rotating racks behind glass, so every slice faces the customer at some point in the cycle. Pizza by the slice, empanadas, hand pies. 18" and 24".
- Display warmer — an 18" cabinet with three fixed shelves and glass on four sides, for a café or kiosk counter where staff hand the product over.
135°F is the number that matters
The FDA Food Code sets hot holding at 135°F or above for time/temperature control for safety food. These cabinets run 86°F to 194°F, so most of that dial is not a holding temperature — 86°F keeps a pastry pleasantly warm and holds nothing safely. Set the cabinet so the food probes at 135°F or above, and verify with a thermometer rather than the display. And remember what these are: a warmer holds cooked food, it does not cook, reheat from cold or crisp anything that has gone soft.
The circuit trap
Most of these cabinets are 1,800 W. At 120 V that is 15 amps — the whole nameplate capacity of a standard 15 A receptacle circuit, drawn continuously. The National Electrical Code requires a branch circuit serving a continuous load to be rated at 125% of it, so 1,800 W in practice means a dedicated 20 A circuit. Everything ships with an ordinary 5-15P plug, which is exactly why this gets missed. If the panel is tight, the lower-wattage models are genuinely lower: 786 W / 7.2 A on the 18" units, 1,000–1,100 W on the compact 27" and 36" cases, 1,500 W on the compact 48".

Holding quality, not just temperature
- Dry heat dries food out. Wrapped product — foil, bags, boxes — holds far longer than an open plate, which is why c-store cases are full of wrapped sandwiches and burritos.
- Crisp and moist do not share a cabinet. Fried chicken wants low moisture, a breakfast burrito wants high. Selling both in volume means two cases, not a compromise setting.
- Do not overstack. A pile blocks airflow and its middle sits below temperature while the display reads fine.
- Set a discard time when product goes in, not when someone notices it looks tired.
- Clean the glass and crumb tray nightly. A lit heated case shows every fingerprint.

Hot food display FAQ
What temperature should a hot food display case hold?
135°F or above for time/temperature control for safety food, per the FDA Food Code. These cabinets adjust from 86°F to 194°F, so set them well above the minimum and check the food itself with a thermometer rather than trusting the display.
Can a food warmer cook or reheat food?
No. Food goes in already cooked to its required temperature. A heated display case has neither the wattage nor the airflow to bring cold product up through the danger zone safely.
What circuit does a commercial food warmer need?
An 1,800 W unit draws 15 amps at 120 volts continuously, which is the entire capacity of a standard 15 A circuit. Because the code requires a continuous load to be sized at 125%, that means a dedicated 20 A circuit in practice. Lower-wattage models (786–1,500 W) are easier to place.
Open merchandiser or closed display case?
Open slanted merchandisers let a customer pick product up without asking, which sells more in a convenience store or gas station. Closed cases with sliding rear doors hold heat and moisture better and suit a counter with staff behind it.
Why does a pizza warmer rotate?
So every slice faces the customer at some point in the cycle, and so the heat evens out across shelves that would otherwise develop hot and cool spots. It is a merchandising device, not a cooking one.
How do I stop food drying out in a heated case?
Wrap it, use the humidity control where the model has one, do not overstack, and set a discard time when product goes in. Unwrapped fried product goes leathery in a dry case within an hour or two.
