Refrigerated Prep Table Buying Guide

Sandwich & salad prep tables

A single row of 1/6-size pans along the back of a refrigerated top, with cabinet storage below — the standard for delis, sandwich shops and salad stations. Our own Polarman PLM-S29S (8 pans) to PLM-S72S (18 pans) are 29 15/16" deep to fit a standard 30" line; True TSSU, Everest EPR and Dukers DSP cover the rest. Shop sandwich prep tables →

Mega top prep tables

Same widths, but the rail is two rows deep — roughly 50% more pans on a table about 4 1/2" deeper. Built for burrito bars, poke, bowls and any line with 12 to 27 toppings. Polarman PLM-S29KS (12 pans) through PLM-S72KS (27 pans). Shop mega top prep tables →

Pizza prep tables

A row of 1/3-size pans behind a deep cutting board, with a lower 41 5/16" working height and large cabinets for dough boxes. Polarman PLM-P44S (6 pans, 12 cu ft), PLM-P67S (9 pans, 22 cu ft) and PLM-P93S (12 pans, 32 cu ft). Shop pizza prep tables →

Undercounter refrigerators, freezers and chef bases

Cold storage without a rail: undercounter units beside the table, and refrigerated chef bases that sit under a range or griddle. Polarman PLM-UC series undercounters (6.5–18 cu ft) and PLM-CBR chef bases (37 15/16" to 74"). Shop undercounter refrigeration → · Shop chef bases →

How to choose a prep table

  • Count the toppings first. Every item that must be open and cold during service is one pan. 11 toppings → a 48" sandwich table (12 pans) or a 29" mega top (12 pans) if the wall is short; 18 toppings → a 48" mega top, not a 72" sandwich table.
  • Then the cabinet. Storage below should hold one service of refills. Tables of the same width share the same cabinet (48" sandwich and 48" mega top are both 12 cu ft), so between them you are choosing rail layout, not storage.
  • Check depth and height. Sandwich 29 15/16" deep, mega top 34 1/2", pizza 32 1/4"; sandwich and mega top stand 43 3/16" tall, pizza 41 5/16".
  • Compressor side. Polarman sandwich and mega top tables are rear-mounted and sit tight to a side wall; pizza tables and chef bases are side-mounted and need clearance on that side.
  • Power. All 115V: 3 A (29"), 4.3 A (48"–72"), 5–5.5 A (pizza). Give the table its own circuit — slicers and microwaves on the same wall are what trip a shared breaker. Full prep table comparison →

Prep table FAQ

What is the difference between a sandwich prep table and a mega top?

The rail. A sandwich prep table holds one row of 1/6 pans; a mega top holds two rows on a table about 4 1/2" deeper, so a 48" mega top carries 18 pans where a 48" sandwich table carries 12. Cabinet storage is the same for the same width.

What size pans does a pizza prep table use?

1/3-size pans — each the footprint of two 1/6 pans — behind a deep cutting board sized for dressing a 16" pie. Polarman pizza tables hold 6, 9 or 12 of them.

What temperature should a prep table hold?

The cabinet and the rail both need to hold food at 41°F or below. Polarman tables are set for 33–41°F; keep pans below the fill line, cover the rail between rushes and pre-chill product before loading. Temperature guide →

How many toppings fit on a prep table?

One pan per topping: 8 to 18 on a sandwich table, 12 to 27 on a mega top, 6 to 12 large pans on a pizza table. Count what has to be open during service, then choose the width.

Do prep tables need a dedicated circuit?

Yes. They draw 3–5.5 A continuously at 115V; sharing a 15 A circuit with a slicer or microwave is what trips the breaker at lunch.

Is a chef base the same as a prep table?

No. A chef base is a low refrigerated drawer unit that sits under cooking equipment — it has no pan rail or cutting board. Use it to add cold storage under a range; use a prep table where you assemble food. Chef bases →
