Open Air Cooler Buying Guide: Air Curtain, Temperature, Sizing and the Plug on the End

An open air cooler is a refrigerated case with no door on the front. A fan pushes a sheet of chilled air down across the opening and a return grille pulls it back in, and that moving sheet — the air curtain — is the only thing standing between your product and the room. Nothing else about the cabinet matters as much as understanding what that curtain can and cannot do.

1. Four names, one cabinet

Open air cooler, open air merchandiser, air curtain merchandiser, grab-and-go cooler, open display cooler — these all describe the same equipment. Manufacturers lean on "air curtain merchandiser" because it names the mechanism; operators say "grab-and-go" because it names the job. If you are comparing quotes from different suppliers, do not assume the different words mean different machines.

What they all have in common is the trade: you give up the door, and in exchange the customer picks the product up without deciding to open anything first. For bottled drinks, sandwiches, salads, cut fruit and packaged snacks in a location with foot traffic, that is usually worth more than the energy the open front costs you. For back-of-house storage it never is — use a reach-in there.

2. How the air curtain works — and what breaks it

Cold air leaves a slot along the top of the opening, falls in a laminar sheet down the face of the case, and is drawn back in at the bottom. It works because that sheet stays intact. Four things tear it:

• Cross-draughts. A door that opens onto the case, an HVAC diffuser blowing across it, a ceiling fan — any of these will push the curtain sideways and warm air walks straight in. This is the single most common cause of an open air cooler that "won't hold temperature" when nothing is wrong with the refrigeration.
• Overfilling past the load line. Every open case has a maximum load line inside. Stack product past it and you are physically standing product in the path of the curtain, splitting it.
• A blocked return grille. The bottom grille has to breathe. A carton pushed against it stops the return, and the curtain has nowhere to go.
• Direct sun and heat. An open case in a shopfront window, or beside a pizza oven, is fighting radiant heat with a sheet of moving air. It will lose.

3. Temperature: the 41°F line

Our open air coolers hold 35.6°F to 50°F. That range is wide on purpose, because the same cabinet gets used for bottled drinks in one shop and prepared sandwiches in another — but the two uses do not share a setting.

The practical consequence: an open air cooler is a sound choice for grab-and-go food, but only in a spot where the curtain is protected. If the only place you can put it is beside the front door, stock it with drinks and put the sandwiches in a case with a door.

4. Vertical, horizontal or dual-serve

The choice is mostly about sightlines. A vertical unit is a wall: put one in the middle of a small shop and you have divided the room. A horizontal unit next to the till gets browsed by everyone queueing and blocks nothing.

6. Check the plug before you order

This is the detail that turns a delivery day into an electrician call, and almost nobody checks it.

These cases draw 12.7 A to 15.4 A on a 110–120 V single-phase supply — far more than most people expect from something that looks like a shop fitting. And the plug is not the same across the range: the smaller units ship with a NEMA 5-15P (the ordinary three-prong plug), while several of the larger ones ship with a NEMA 5-20P, which has one blade turned sideways and will not fit a standard 15-amp outlet.

• Find the plug type for the exact model you are buying — it does not track width. A 48" unit in this range takes a 5-20P while a 40" unit takes a 5-15P.
• Give it a dedicated circuit. At 14–15 A a single case effectively occupies a 15-amp circuit on its own. Sharing one with a register, a coffee grinder or a second case is how you find out what the breaker does mid-service.
• Check where the outlet is relative to where the case will stand. The compressor is bottom-mounted; you cannot simply push the cabinet flat to the wall over a cord.
• A 5-20P needs a 20-amp receptacle and a 20-amp circuit. If you only have 15-amp outlets in that wall, the fix is an electrician, not an adapter.

7. Before you order

• Decide what goes in it first. Sealed drinks can use the whole temperature range; food has to sit at 41°F or below.
• Look at the spot honestly. Doorway, HVAC vent, sunlight, hot equipment — any of these means choose a different spot or a different case.
• Pick the format by sightline, then the width by the gap you have.
• Confirm the plug type and circuit against the model, not the category.
• Allow for the depth. These are 32" to 34" deep before you add clearance for the return grille and the customer standing in front of it.
• Check the delivery route. 265 lb to 650 lb, and the dual-serve units are the heavy end.
• Put the night curtain on the closing list from day one.
