A commercial convection oven asks for less maintenance than a fryer, which is exactly why it gets neglected until something goes wrong. Most of what it needs takes five minutes a day and one extra job a week. This checklist is built from what Vulcan and Blodgett actually publish in their manuals, with the parts that come from retailer checklists marked as such.
Daily: interior, exterior, gasket
The interior
Vulcan's instruction for a porcelain interior is to clean it daily "with soap or detergent and water," then "rinse thoroughly and wipe dry with a soft clean cloth." That is the whole job on most days.
For heavier build-up, Blodgett's position may surprise you: "The porcelain interior can be cleaned with any commercial oven cleaner." The widely repeated warning that harsh chemicals will destroy a porcelain enamel oven interior is not what the manufacturer says. The real restriction is about which components the cleaner touches — see the next section.
On stainless interiors, soap and water handles routine cleaning. For stubborn deposits Vulcan allows an abrasive cleanser mixed into a paste, applied with stainless wool or a sponge, "always rubbing with the 'grain.'" Blodgett says the same thing: "Always rub with the grain of the metal." Go across it and you leave scratches that hold grease.
The exterior
Vulcan: wipe daily with a clean damp cloth. Blodgett: saturate a cloth with stainless steel cleaner and wipe down. Baked-on splatter comes off with a non-toxic industrial stainless cleaner.
The door gasket
Wipe it daily with an approved cleaner to keep the seal clean. This one comes from WebstaurantStore's equipment checklist rather than a manufacturer manual, but it is cheap insurance — a gasket caked in carbonised grease does not seal, and does not last.
Weekly: the job everyone skips
There is one weekly task that appears in every Blodgett manual we checked, and almost never in kitchen routines:
The retailer checklists add two more weekly items: inspect and clean the fan blades, and check thermostat calibration. Both are sensible; neither appears in a manufacturer manual at that interval.
The door gasket
How do you know a gasket has failed?
Blodgett's troubleshooting guide points at the gasket when the door will not close properly: "A dirty or damaged door gasket or hinge could also be preventing the door from closing. Clean or replace if necessary."
The signs worth watching for:
- Visible cracking, hardening or tearing
- The gasket no longer compresses when the door shuts — it has taken a permanent set
- The door will not latch cleanly
- Heat or steam escaping around the door edge
- Longer cook times and uneven results at an unchanged setpoint
How often should you replace it?
On condition, not on a calendar. No manufacturer we checked publishes a replacement interval, and any guide that gives you one is making it up. What is published is an inspection cadence: Foodservice Equipment & Supplies recommends checking the gasket quarterly so that "you can spot damage and replace the gaskets immediately."
The convection fan
The fan is what makes it a convection oven, and it needs three things.
Cleaning
Blodgett's Mark V manual has you remove the racks, rack supports and blower wheel, and soak the parts in a solution of ammonia and water before reinstalling. Grease on the blades throws the wheel out of balance and makes airflow uneven, which shows up as inconsistent browning long before it shows up as noise.
Keeping cleaner off it
This is the restriction that actually matters, and it is the one people get wrong. Blodgett: "Be sure caustic cleaning compounds DO NOT come in contact with the temperature probe, heating element, and blower wheel." The porcelain can take oven cleaner. The probe, the element and the blower wheel cannot.
Lubrication — none
Vulcan: "The fan motor comes with sealed bearings and requires no lubrication." Blodgett: "This oven requires no lubrication." There is nothing to oil, and trying to will not help.
What does want occasional lubrication is the door mechanism. Vulcan: "The door hinges and mechanism require occasional lubrication with mineral oil."
Thermostat calibration
Here is an honest gap: no convection oven manufacturer we checked publishes a calibration interval or procedure. Fryer manufacturers do — Frymaster makes it a monthly check — and monthly is a reasonable cadence to borrow, but it is borrowed, not specified.
How to check it
- Place a calibrated oven thermometer at the centre of the middle rack.
- Set the oven to a temperature you actually use — 350°F is a fair test.
- Let it run long enough to cycle fully, not just to reach setpoint once.
- Compare the reading to the dial.
If it is off, have a technician adjust it. Blodgett's guidance is direct: a thermostat out of calibration is one of the conditions where "it is time to give your service agent a call."
What drift looks like in service
Product not finishing in standard times. Browning that has changed at an unchanged setting. Trays that used to come out together now needing a rotation. Those symptoms show up before anyone thinks to put a thermometer in the oven.
You will see a "recalibrate if it is more than 25°F off" rule quoted online. That comes from residential appliance guidance and we could not verify it for commercial ovens — treat any consistent, repeatable gap as worth a service call.
What not to do
- Do not clean it hot. Blodgett: "Always clean the unit when it is cold."
- Do not clean it live. Disconnect from the power supply first — including on gas models
- Do not let caustic cleaner reach the probe, element or blower wheel
- Do not scrub stainless across the grain
- Do not check the flue while it is hot. Vulcan specifies checking it annually "when cool"
- Do not lubricate the fan motor. Sealed bearings
One more, offered as good practice rather than as a manufacturer rule because we could not find it in any manual: do not hose or pressure-wash the oven. The justification is in the verified facts above — the unit has an electrical supply that must be isolated before cleaning, and a temperature probe, heating element and blower wheel that manufacturers explicitly shield from cleaning chemicals. A water jet respects none of that.

Staff handle the daily and weekly items. The quarterly and annual work belongs to a technician — not because it is difficult, but because it involves the burner, the flue and the blower, and those are the three places where a mistake is expensive.
