How to Choose a Commercial Gas Fryer: Tube vs Open Pot, Capacity and BTU

Two decisions settle most of a commercial gas fryer purchase: tank design, and how much oil it holds. Get those right and the rest follows. This guide works through both with the actual numbers from a real product line, plus the one specification almost nobody compares — BTU per pound of oil, which is what recovery time actually depends on.

Tube, open pot or flat bottom

This is the first fork, and it is decided by your menu rather than your volume.

Tube-type fryers

Heat exchanger tubes run through the oil itself. Below them sits a deep cold zone where crumbs and breading sink out of the cooking area instead of burning in it. That is the whole design argument: heavily breaded product sheds a lot of debris, and the cold zone is what stops that debris from turning your oil dark in two days.

Choose a tube fryer for fried chicken, breaded fish, anything dredged or battered. The trade-off is that the tubes are inside the pot, so cleaning takes longer.

Open-pot fryers

The burners sit outside the frypot and heat it through the wall, leaving a smooth, unobstructed interior. There is still a cold zone, but the real advantage is cleaning — nothing to work around with a brush.

Choose an open pot for french fries, wings, lightly breaded seafood, onion rings — anything that does not shed much.

Flat-bottom fryers

No cold zone at all, because the product floats. These are specialised units for donuts, funnel cakes, tempura and other floating batters. If you are not making those, you do not need one.

The quick test. Look at what you dredge. If most of your fried menu goes through flour or batter before it hits the oil, buy a tube fryer. If it comes out of a bag frozen and goes straight in, buy an open pot and save yourself the cleaning time.

How much oil do you need?

Oil capacity is the usual proxy for throughput, and the brackets are reasonably consistent across the industry:

A 40 lb floor fryer is the industry baseline — the default full-size unit, not a small-café machine. If you see a guide describing 40 lb as entry-level equipment for light use, it is not describing commercial kitchens.

One fryer or two?

Two smaller fryers usually beat one large one. You get flavour separation — fish does not have to share oil with fries — and you can shut one down through slow periods instead of holding a large volume of oil at temperature for nothing. It also means a failure takes out half your fry station, not all of it.

The argument for a single larger vat is footprint and a lower oil cost per pound. If your menu is one product, that can win.

BTU per pound: the number nobody compares

Every spec sheet lists BTU. Almost nobody divides it by the oil capacity — which is the figure that actually predicts how fast a fryer comes back to temperature after you drop a frozen basket into it.

Here is the whole Flamaster gas line worked out, using each model's maximum rated oil capacity:

Read that table again. The F5 has the biggest burner in the line — 150,000 BTU, 67% more than the F3 — and the lowest BTU per pound of oil. Per pound it recovers more slowly than the F4. What the F5 buys you is not speed, it is capacity: 80 pounds of oil holds far more heat in reserve, so it tolerates a big drop better even though it reheats more slowly per pound. The F4 is the quickest recovering unit in the line.

Which one you want depends on how you fry. Steady, continuous loads favour the large vat's thermal reserve. Bursty service with big drops between quiet stretches favours the F4's higher BTU per pound. Neither is "more powerful" in a way that a single headline BTU number captures.

What else affects recovery

  • Tube count — more tubes means more heat-transfer surface in contact with the oil, not just more gas burned
  • Gas supply pressure — a fryer starved of pressure will never make its rated output, which is why slow recovery is often an installation fault rather than an equipment one
  • Dirty burners — sooted burners lose output gradually enough that nobody notices until the fryer feels slow
  • Overloading baskets — the fastest way to make any fryer look underpowered

Natural gas or propane

Every gas fryer here ships in two versions, configured at the factory for one fuel or the other. The orifices and the regulator differ because propane carries roughly 2.4 times the energy per cubic foot and arrives at higher pressure.

You cannot connect one to the other. Pitco's manuals put it in one line: "NEVER supply the fryer with a gas that is not indicated on the data plate." Conversion is possible, but it is a licensed technician with the manufacturer's kit — orifices, regulator spring and a new rating plate.

What the installation needs

Gas supply

Add up the BTU/hr of everything that will run at once and have your gas fitter confirm the meter and pipe can carry it. A three-fryer battery of F4s is 360,000 BTU/hr before you add a range. Supply pressure requirements vary by model — Frymaster specifies 6–14" W.C. incoming on natural gas, Pitco 7.0 ± 2.0" W.C. — so the data plate governs, not a rule of thumb.

Ventilation

A commercial fryer produces grease-laden vapour and needs a Type I hood in nearly every jurisdiction. Requirements come from NFPA 96 and your local mechanical code. Call your hood contractor or your authority having jurisdiction with the model number before the fryer ships — this is the single most common reason a delivered fryer sits unused.

Clearances and drainage

  • Check the required clearance to combustible and non-combustible walls on the spec sheet
  • Leave room in front for the drain to reach a shuttle or disposal unit — a full-port drain valve is useless if nothing fits under it
  • Casters make nightly cleaning behind the unit possible; legs do not

Before you order

  1. Tank design — tube for breaded, open pot for everything else
  2. Capacity — 35–50 lb covers most restaurants; go bigger only if you fry continuously
  3. BTU per pound — compare it across the models you are shortlisting, not just headline BTU
  4. Fuel — confirm what the site actually has, and order that configuration
  5. Gas capacity — total connected load, confirmed by your fitter
  6. Hood — confirmed with your AHJ before the order, not after
  7. Access — doorways, aisle width, and something that fits under the drain
