A commercial fryer is the one piece of equipment on your line where maintenance directly changes the taste of the food. Skip the filtering and your fries taste like last night's fish. Skip the boil-out and your fresh oil foams on day one. This guide covers the daily routine, the boil-out step by step, and how to tell when oil is genuinely finished rather than just dark.
The daily routine
Most of what keeps a fryer working is done in the ten minutes after service, not in a deep clean once a month.
End of every shift
- Skim the oil during service, not just at the end — loose crumbs carbonise and speed up oil breakdown
- Pull the baskets and wash them in detergent solution; dried batter on a basket ends up back in the oil
- Wipe the cabinet inside and out with warm water and a degreaser
- Brush the sediment out of the cold zone at the bottom of the pot
- Filter the oil
One thing worth doing that costs nothing: drop the temperature during slow periods. Oil held at 350°F with nothing in it degrades the whole time. Backing the thermostat down between rushes measurably slows that.
How often should you filter fryer oil?
Once a day is the floor. That is the minimum recommended by WebstaurantStore and Wasserstrom alike. Restaurant Technologies argues for at least twice a day in high-volume operations, with a minimum of five minutes per vat, and calls consistent filtration the single most important factor in oil life.
The right frequency depends on what you fry. Proteins throw more particulate and more moisture into the oil than potatoes do, and anything heavily breaded is worse again. A wings-and-fish operation filters more often than a fries-only one.
Why the cold zone matters
Tube-type fryers like the FLM-F3, F4 and F5 have a deep cold zone below the heat tubes where crumbs settle out of the cooking zone instead of burning in it. Open-pot fryers like the VF40 and VF50 put the heat outside the pot, which leaves a smooth interior that is faster to clean. Either way the sediment still has to come out — the cold zone slows the burning, it does not empty itself.
How to boil out a commercial fryer
A boil-out is a hot detergent soak that dissolves the polymerised oil film off the pot walls and heating surfaces. It is not optional maintenance: that varnish layer is what makes new oil go bad early.
The steps
- Drain the frypot and do not refill it with oil. Send the used oil to your collection container.
- Clear out the solids. Remove food particles and residual oil from the pot and the filter pan.
- Close the drain valve securely and fill with cold water plus your cleaner. Add the chemical while the water is still cold, and use a low-sudsing detergent or a proper boil-out product — follow the concentration on the label, because no manufacturer publishes a generic ratio.
- Fill to the bottom oil-level line, never above your normal oil level. On Pitco units the rule is to keep the liquid above the heat tubes and above the minimum mark. The solution has to have room to foam.
- Set the thermostat to a simmer and heat. Frymaster specifies 195°F; Pitco specifies 200°F. Either way you are aiming just below water's 212°F boil.
- Simmer, and do not walk away. Frymaster's manual says one hour. Other sources run shorter — 15–20 minutes at KaTom, 20 at WebstaurantStore, 5–10 at Parts Town. Your manual governs. Frymaster is explicit that you never leave the fryer unattended during a boil-out, and that if the solution overflows you switch it off immediately.
- Shut it off and let the solution cool before you touch the drain.
- Drain into a suitable container — not the filter pan. Frymaster calls this out specifically: the boil-out solution must not go through the built-in filtration system or the shortening disposal unit. Wipe the pot with a clean towel.
- Rinse twice with clean, cold water, wiping between rinses. Keep going until no cleaner remains.
- Dry it completely. This is the step people rush, and it is the one every manufacturer flags. Frymaster: "Ensure that the frypot is completely free of water before filling with cooking oil or shortening. When the oil or shortening is heated to cooking temperature, water in the frypot will cause splattering."
What temperature should a fryer boil-out be?
Between 195°F and 200°F depending on the manufacturer, or whatever your manual specifies. The point of the setpoint is to hold the solution at a simmer rather than a rolling boil — a hard boil does not clean better, it just makes detergent foam climb out of the pot, which is a scald and steam hazard.
How long should you boil out a fryer?
Published guidance ranges from 5 minutes to a full hour. The one-hour figure is Frymaster's, from the manufacturer's own manual; the shorter times come from suppliers and trade guides. If your pot has heavy varnish, longer is the answer. Follow the manual for your model.
How often should you boil out a fryer?
Weekly is the dominant recommendation — that is where Frymaster, one of the Pitco manuals, WebstaurantStore and Parts Town all land. One Pitco manual lists it as monthly. In practice most operations settle between 7 and 14 days, adjusted for volume. A fryer running breaded chicken all day needs it more often than one doing fries.
Do you need a vinegar rinse?
You will see this recommended — a diluted vinegar or citric acid rinse to neutralise alkaline detergent residue. It is worth knowing where it comes from: it appears in retailer and trade guides, not in the manufacturer manuals. Frymaster and both Pitco manuals specify repeated clean-water rinses instead, and Parts Town suggests baking soda for stubborn residue, which is itself an alkali.
Either approach is defensible because the goal is the same: zero detergent residue in the pot. Leftover cleaner is one of the main causes of fresh oil foaming, which brings us to the next section.
When to change the oil
What is TPM?
Total Polar Materials — also called Total Polar Compounds — is the percentage of non-triglyceride breakdown products in the oil. As oil is used, hydrolysis, oxidation and polymerisation produce polar compounds that accumulate and never go back down. That one-way behaviour is why TPM is the accepted objective measure of oil life, and why colour is not.
Hand-held digital TPM meters read the oil in 30 to 60 seconds and usually give a traffic-light output. They are the only way to know rather than guess.
Is there a legal TPM limit in the United States?
No. This is worth being precise about, because it is widely misstated.
The 24–25% discard threshold is a legal limit in several European countries — Germany at 24%, Belgium, France, Italy and Spain at 25%, Austria at 27%. In the United States there is no federal TPM limit, and we are not aware of any state limit. The FDA Food Code does not set one.
American operators use 24–25% as a voluntary quality benchmark, and many chains write it into their own specifications. That is a good standard to adopt. It is just not a law, and anyone telling you the FDA requires it is wrong.
The signs operators actually use
- Persistent foaming — dense foam that lingers and climbs rather than breaking
- Smoking below setpoint — if the fryer is set to 350°F and the oil is smoking, its smoke point has already dropped below your cooking temperature
- Odour and taste — fresh oil is nearly odourless; finished oil smells rancid, acrid or waxy
- Gummy residue — sticky, tape-like polymer on the pot walls
- Colour — useful, but the weakest signal on this list. Dark oil is not automatically bad oil, and light oil is not automatically good
For reference, the USDA puts common smoke points at peanut 450°F, canola 435°F and corn 410°F, and notes that deep frying oil can exceed 400°F. Most foods fry best between 350°F and 375°F, which leaves less headroom than people assume once the oil has degraded.
Four problems and what usually causes them
The pilot won't stay lit
Work through it in this order, per Tundra's service guidance: check the hi-limit first by taking one wire off and connecting it to the other. If the pilot still will not hold, the thermopile is the likely culprit. If it still will not hold after that, what is left is the combination safety gas valve.
The oil won't reach temperature — or won't shut off at it
If the burner will not light even with a healthy pilot, or the oil will not climb to setpoint, the thermostat is the usual replacement. The opposite fault — oil overheating past setpoint — is also a thermostat problem, and it will eventually trip the hi-limit and shut the whole unit down. Frymaster's schedule has you check thermostat calibration monthly for exactly this reason.
The oil is foaming
Four causes, in rough order of how often they turn out to be the answer:
- Cleaner residue left in the pot after a boil-out — the reason step 9 above matters
- Residual water in the pot when the oil went in
- Wet product going into the basket, or overloaded baskets forcing too much moisture in at once
- Genuinely spent oil
The oil is breaking down too fast
Filtration first — under-filtering is the most common answer. After that: holding at full temperature through dead periods, exceeding the oil's smoke point, and crumb or cleaner residue in the pot. If none of those apply and recovery time has also got worse, that points at the equipment rather than the oil: low gas supply pressure and dirty burners are both worth having a technician check.
The full maintenance schedule
