Commercial Refrigeration: Types, How to Choose, and What It Costs to Run

Commercial refrigeration is the backbone of every restaurant, bar, bakery, and grocery operation — and the equipment behind it is engineered very differently from anything in a home kitchen. This guide covers the main types of commercial refrigeration, how the systems actually work, and the specs that matter when you choose a unit.

What Makes Refrigeration “Commercial”

A commercial refrigerator is built for a duty cycle a residential unit would never survive: doors opening hundreds of times a shift, warm product loaded in bulk, and a mandate to pull temperature back down fast before food drifts into the danger zone. That means a heavier compressor, a forced-air evaporator, thick foamed-in-place insulation, and stainless steel construction. Reputable units are NSF/ANSI 7 certified for food-zone sanitation and built to the U.S. Department of Energy's commercial refrigeration efficiency standards. Most modern equipment has also moved to R290 (propane) — a natural hydrocarbon refrigerant with very low global-warming potential that has largely replaced older HFCs like R404A.

The real measure of a commercial refrigerator is not how cold it gets — it is how fast it recovers temperature while being worked hard. That recovery speed is what keeps food out of the danger zone during a rush.

The Main Types of Commercial Refrigeration

“Commercial refrigeration” is really a family of specialized units. Most kitchens run several together:

  • Reach-In Refrigerators & Freezers: Tall one- to three-door cabinets for bulk cold storage — the workhorse of the back of house.
  • Undercounter & Worktop Units: Low-profile refrigeration that fits under a counter or doubles as a chilled prep surface — ideal for tight lines and bar stations.
  • Prep Tables: Refrigerated sandwich, salad, mega-top, and pizza tables that keep pans of ingredients cold right at the point of assembly.
  • Merchandisers & Air-Curtain Coolers: Open grab-and-go display refrigeration that drives impulse sales of drinks and packaged food.
  • Display Cases (deli, bakery, sushi): Refrigerated glass showcases that keep prepared food fresh and visible to customers.
  • Bar Refrigeration: Back bar coolers, bottle coolers, and kegerators built to fit under and behind the bar.
  • Ice Cream & Display Freezers: Dipping cabinets and glass-top freezers that hold frozen desserts at scooping temperature.

How the Unit Is Cooled: Self-Contained, Water-Cooled, or Remote

Every refrigerator has to move heat out of the cabinet — how it does that changes install, cost, and where the heat goes:

  • Air-cooled, self-contained: The compressor and condenser are built into the unit, so you plug it in and go. Affordable, easy to move, and the right choice for most single units — just remember it dumps heat (and some noise) into the room.
  • Water-cooled: Uses a water line to shed heat instead of blowing it into the kitchen. Useful in hot, cramped spaces, but it adds water usage and maintenance.
  • Remote: The compressor sits outside or on the roof, keeping the kitchen quieter and cooler. Standard for walk-ins and long display lines, but it needs a refrigeration technician to install.

The Spec Decisions That Actually Matter

Capacity — size to your peak, not your average

Undersizing forces unsafe overpacking and blocks the airflow the unit needs to hold temperature. Reach-in capacity tracks closely with door count:

Temperature

Coolers should hold at or below 40°F (many operators target 33–38°F for a safety margin; the FDA Food Code cold-holding limit is 41°F). Freezers should hold 0°F or colder. The danger zone, where bacteria multiply fastest, is roughly 40–140°F — the whole job of the unit is to keep product out of it. Solid vs. glass doors

Solid doors insulate better and cost less to run — best for back-of-house storage. Glass doors let staff and customers see product at a glance — best for front-of-house and merchandising, at a small energy premium.

Top-mount vs. bottom-mount compressor

This choice is really about your environment. Bottom-mount units are easier to load, put the heaviest part at floor level, and pull in cooler air — but in flour-heavy bakeries or greasy cook lines that low intake clogs the condenser faster. Top-mount units pull cleaner air from up high (better for dusty/greasy rooms) but make the lowest shelf harder to reach. Match the unit to where it will live.

Defrost and drainage

Coolers typically run an automatic defrost cycle; freezers need a proper defrost system and condensate management to prevent ice buildup on the coils. Neglect it and efficiency drops fast.

Energy efficiency

Look for ENERGY STAR and DOE-compliant models, R290 refrigerant, LED interior lighting, tight door gaskets, and — for open merchandisers — retractable night curtains. Because the unit runs 24/7, these features pay back over the equipment's life.

The three main formats suit very different operations — and most kitchens end up combining them. A quick rule of thumb: walk-ins for bulk storage, reach-ins as the workhorse on the line, and undercounters or prep tables right at each station. What It Costs to Run — and to Keep Running

Purchase price is only part of the math. A commercial refrigerator runs around the clock, so energy is a real monthly line item, and maintenance protects it. A leaking door gasket or a condenser coil clogged with grease and dust forces the compressor to work overtime and quietly inflates your bill — and shortens the unit's life. Clean the condenser coils roughly once a month, check gaskets for a tight seal, and keep the ventilation clearances clear.
