Buy too small and your staff overpacks shelves, chokes the airflow, and fights temperature during every rush; buy too large and you waste floor space and pay to cool empty air. How Commercial Refrigerators Are Measured

Two numbers describe every unit, and you need both. Exterior dimensions (width x depth x height, in inches) tell you whether the cabinet physically fits your space and fits through the door to get there. Interior capacity (in cubic feet) tells you how much product it actually holds. They do not scale together perfectly — a glass door, a thicker insulated wall, or a bottom-mounted compressor can all shrink usable interior without changing the exterior footprint. Always check both before you buy.

Notice the pattern: every added door roughly adds another 24–27" of width and about 22–25 cubic feet of storage, while depth and height barely move. How Much Cubic Footage Do You Actually Need?

There is no universal formula, but there is a reliable method: size to your peak inventory, not your average day. A common industry starting point is roughly 5 cubic feet of refrigeration per meal served during your busiest service, then adjust up for menus heavy on fresh produce, dairy, and proteins and down for operations that rely on frozen or shelf-stable stock. Here is a practical way to estimate it:

  • Start from your busiest delivery day. Look at the largest single drop-off you take in a week — that is the volume your refrigeration has to swallow at once, not the amount you use on an average afternoon.
  • Count your prepped inventory. Full sheet pans, hotel pans, and Cambro containers all need a home. If your line cooks batch-prep for two days out, your cold storage has to hold two days of mise en place plus raw stock.
  • Leave a buffer. Plan to fill a unit to about 75–80%, never to the walls. Cold air has to circulate around product to hold temperature; a jam-packed cabinet runs warm and uneven.
  • Separate raw and ready-to-eat. Food-safety separation often means you need more total doors, not just more cubic feet — a factor undersizing tends to ignore.
A single unit that runs 90% full every day is not "efficient" — it is undersized. When product blocks the evaporator airflow, the compressor runs longer, your energy bill climbs, and temperature recovery slows during a rush. If you are always cramming, size up.

Measure the Path, Not Just the Spot

The most expensive sizing mistake is buying a unit that fits the kitchen but not the route to it. A 3-door reach-in is 76–82" wide and often ships on a pallet close to 84" tall — it will not clear a standard 36" interior door without planning, and it may not fit a service elevator or a tight back hallway. Before you order:

  • Measure every doorway, hallway turn, and elevator on the delivery path, including the height of the door frame — not just the width.
  • Account for the pallet and crating. The shipped dimensions are larger than the bare cabinet; ask for crated dimensions if clearance is tight.
  • Check the final resting spot for clearances. Leave at least 1" on each side and 2" at the rear for the airflow the condenser needs. A bottom-mount unit also pulls air in low at the front, so keep that intake clear.
  • Confirm door-swing clearance. A full reach-in door needs room to open past 90 degrees to pull out shelves and pans; make sure it does not slam into a prep table, a walkway, or an adjacent unit.

Electrical: Will It Run on a Standard Plug?

Physical fit is only half the install. Smaller refrigeration — most single-door reach-ins and undercounters — runs on a standard 115V circuit with an ordinary NEMA 5-15 or 5-20 plug. As you scale up, that changes: larger multi-door reach-ins, low-temp freezers, and many prep tables often call for a dedicated circuit, and some heavier or specialty units run on 208–230V and need a matching receptacle. Check the unit's spec sheet for voltage, amperage, and plug type before delivery day — discovering you need an electrician after the truck arrives is a costly delay. As a rule, always put commercial refrigeration on its own dedicated circuit so it is not fighting a mixer or a microwave for power.

Solid vs. Glass Doors and Usable Interior

Door style affects both the number on the spec sheet and how the box performs. Solid doors insulate better, cost less to run, and are standard for back-of-house bulk storage. Glass doors let staff and customers see product at a glance — ideal for merchandising and grab-and-go — but the glass and heated anti-condensate frame insulate less and slightly reduce usable interior, at a small energy premium. If two units share the same exterior width, the solid-door version will generally give you a bit more effective cold storage.

Matching Size to Format

Cubic feet grows with door count, but the right format depends on where the unit lives and what it does. Tall reach-ins deliver the most storage per square foot of floor for back-of-house bulk.
